MY FOOD PROFILE

"At our house, growing up, my father always had a vegetable garden. He also shared a plot of land with a friend of his and they would grow all types of vegetables. I use to love the radish and cherry tomatoes and would always say "Dad grows these just for me." At times my mom would get flustered when Dad had gone out to the garden then brought in large loads of veggies that he deposited on the kitchen counter ready for cleaning. My mother would create great meals fresh from the garden. On occasion my Dad would also make what he would call - Succotash - this wonderful mix of sauteed fresh veggies (squash, tomatoes, onions, okra, zucchini, beans, etc.). I absolutely loved it and was always fascinated by the idea of growing foods from seeds and how they eventually made their way to the dinner table.

As I grew older I began to cook. I loved cooking with veggies - my favorite food group - and felt proud when my Dad would comment in anticipation of my concoction, "...another one of Karen's creations!"

In honor of my Dad and him instilling in me such a love for veggies, I have created Great Veggie Eats, which is my way of providing information on wonderful foods, great recipes and sustainable healthy living...and our right as human beings on God's planet to have access to good healthy organic nutritious life sustaining food."
